Warm Nights & Cool Wines

The summer evening is warm. I’m sitting on the porch with a cool glass of Frühroter Veltliner. It slips across the tongue easily, delicate but suggestive, hinting at a night filled with good food, conversation and pleasure. This is my month to unwind. A time to pause and let things settle.

But for the people who make it possible for me to enjoy this quiet moment, July is far from restful.

Across the Austrian countryside, this is a critical time in the vineyard calendar. The vines are at their fullest, rich with leaves, and clusters of young grapes are growing fast. Decisions made now will shape the entire vintage. The work is quiet, focused, and relentless.

In both Lower Austria and Burgenland, vineyard teams are deep into canopy management. That means removing leaves and extra shoots to open the vines to light and air. It sounds simple, but it is anything but. Done well, it protects the grapes from disease, particularly mildew and other fungi that thrive in the humid warmth of Austrian summers. It also encourages even ripening and helps maintain balance in the fruit.

In Lower Austria, where the focus is on white wines like Grüner Veltliner and Riesling, canopy work is especially precise. These varieties depend on freshness, clarity and acidity. Too much shade and the grapes stay green. Too much exposure and they lose their nerve. There is no formula. Every vine, every row, is a judgement call.

In Burgenland, where the sun beats harder, some growers are already beginning to thin the fruit. This is known as green harvesting. It means cutting away clusters to allow the rest to ripen more fully. Grapes like Zweigelt and Blaufränkisch need careful attention now. Sugar and acid levels are changing fast. What is done in these weeks will show up clearly in the glass months from now.

July may feel lazy on the surface. The fields shimmer, the crickets chirp, the days roll on. But underneath, the work is exacting. Every decision in the vineyard is a quiet wager on the future. The harvest is still distant, but the outcome begins here with this heat, this vine, this cluster, this cut.
